Smoked Bacon Bourbon Brownies

Ingredients

  • 2 C Flour (Regular or Gluten-Free)
  • 1 C Brown Sugar
  • Caramel Sauce
  • Sea Salt
  • 6 Large Eggs
  • 1 C Powdered Sugar
  • 4 T Water
  • ¼ C Bourbon
  • 1 C Canola Oil
  • 1 ½ C Cocoa Powder
  • 2 T Coffee Grounds
  • 6 Slices Bacon
  • 3 C Sugar

Instructions

For the Candied Bacon

  • Add the bacon to to a baking sheet and coat with brown sugar
  • Turn on your smoker, preheat to 225 degrees and then smoke the bacon for 1 hour

For the Brownies

  • Preheat your smoker (or oven) to 400 degrees
  • In a large mixing bowl, mix all the dry ingredients together. Next add the eggs, oil, and water and mix until combined
  • Pour half of the mixture into a cast iron pan (or baking dish if cooking in oven). Drizzle with caramel. Pour the second half of the batter and drizzle a little more caramel
  • Chop up the bacon and sprinkle over the top of the brownie batter
  • Smoke (or bake) the brownies for roughly 1 hour, or until an inserted toothpick comes out clean
