One Pan Taco Pasta

Ingredients

  • 1 lb Ground Beef
  • 2 Cloves Garlic
  • 1 Shallot
  • 1 tbsp Butter
  • Salt & Pepper to Taste
  • 10 oz Diced Tomatoes w/ Green Chiles
  • 1 Packet Taco Seasoning
  • 3 tbsp Tomato Paste
  • 1 tbsp Worcestershire
  • 2 C Beef Broth
  • 1 C Whole Milk
  • 10 oz Uncooked Pasta
  • 2 C Cheddar Cheese
  • 1 C Monterey Jack

Instructions

  • Mince the garlic and chop the shallot
  • In the pan, add the ground beef and season to taste with salt and pepper
  • Cook through and remove the grease. Add the butter, garlic, and shallot and cook until fragrant (1 min).
  • Add the tomatoes, paste, Worcestershire, and taco seasoning. Stir and cook for 2 minutes
  • Add the broth and whole milk and bring to a simmer, add the pasta, cover and simmer until cooked to al dente.
  • Add the shredded cheese, stir until melted and then plate
  • Top with any desired toppings (sour cream, avocado, etc.)
  • Enjoy!!
