Homemade Chicken Rice

Ingredients

  • 2 Tbsp. butter
  • 3-4 oz thin spaghetti
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • 1/2 tsp. turmeric
  • Salt & pepper to taste

Instructions

  • In a pot, melt the butter.
  • Break the spaghetti into small pieces (about 1 inch in length) and add to the pot along with the rice.
  • Cook for 2 minutes as the rice starts to smell like brown butter.
  • Add in the remainder of the ingredients, give it all a good stir, and bring to a boil.
  • Reduce the heat, cover, and simmer for 20-25 minutes or until rice is tender! Stir a few times in between.
  • Enjoy!

Notes

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make a meal gluten-free. The only thing you need to watch out for on this one is the pasta. Use your favorite gluten-free brand and enjoy!
