Garlic Parmesan Chicken Skewers

Ingredients

  • For the chicken:
  • lbs chicken breast
  • Olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 2 tsp. Cajun seasoning
  • For the sauce:
  • 4 Tbsp. butter
  • 3 cloves garlic
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried parsley
  • 1/2 cup shredded Parmesan
  • 1 lemon juiced

Instructions

  • Cut your chicken breasts into 1-inch cubes.
  • Drizzle with olive oil and sprinkle on the spices listed above.
  • Toss the chicken until it is evenly covered in the spice mixture.
  • Thread the chicken onto kebab skewers, fire up the grill, and cook the chicken.
  • While those cook, make the sauce by melting the butter in a pan and adding the minced garlic. Cook for a minute and remove the heat, then add the remaining ingredients and stir until it is thoroughly mixed.
  • When the skewers are done, add them to a plate and pour the butter mixture over the top!

Notes

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make this meal gluten-free. This is a simple one, as there are no ingredients that should have gluten in them!
