Equipment

Ingredients

  • 1 can black beans
  • 1 can black eyed peas
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 1/3 small red onion
  • 1/4 cup chopped cilantro
  • 2 cups corn
  • 1 small jalapeño
  • 1/4 cup olive oil
  • 1 lemon juiced
  • 1/4 cup white wine vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic powder
  • 1/4 cup sugar
  • 1 tsp. chili powder
  • 3/4 tsp. Chipotle chili powder

Instructions

  • Thoroughly drain and rinse the beans and peas, then add to a large mixing bowl.
  • Finely chop the bell peppers, onion, and cilantro.
  • Add everything else to the bowl, then mix everything together.
  • Serve with tortilla chips
  • Enjoy!
