Breaded Fish Tacos

Equipment

  • Large Pot or Pan for frying

Ingredients

  • 1 lb Fish (I used Atlantic Cod)
  • 1 C Bread Crumbs
  • 1-2 T Cajun Seasoning
  • 2 Eggs
  • ½ C Milk
  • Oil
  • Corn Tortillas
  • Mayo
  • Chili Sauce
  • Yellow Rice

Mango Salsa

  • 2 Mangos, diced
  • ½ Red Onion, minced
  • 1 Habanero, minced
  • ¼ C Cilantro, chopped
  • 1 Lime, juiced

Instructions

  • Cut your fish into small rectangular strips (1/2" x 3-4")
  • If you are making rice, start it now
  • Whisk the eggs and milk together
  • On a plate, mix together the bread crumbs and Cajun seasoning
  • Dip a piece of fish in the egg, bread crumbs, egg, and bread crumbs, then set aside. Repeat for all other pieces of fish
  • Heat your oil in a pan or pot, add half the fish, cook until golden brown and cooked through
  • In the meantime, prep the mango salsa
  • For the Chili Sauce, mix together mayo and your favorite chili sauce
  • Grill or heat the corn tortillas
  • Build. Tortilla, rice, meat, salsa, chili sauce....so good!
