Teriyaki Turkey Bowls

Back with another easy and healthy meal for the whole family! This one has a little upfront prep work with chopping and dicing, but can still be made in less than 30 minutes!

I’m pretty sure I could eat some sort of Asian style dish every single night. I love the flavors they present, they are easy to make, and they are typically on the healthy side. They are also a chance to try to sneak some veggies so my kids actually eat them (which is getting harder and harder to do).

For the prep:

The prep on this dish is still relatively easy but does require a little more chopping than my typical #easymondaymeal.

I prefer a shallot with this dish. Can you use an onion? Absolutely. But in my opinion, the shallot adds a punch of flavor that can’t be beat.

When cutting up the carrots and the broccoli, make sure they are chopped small enough so they cook quick enough.

Nothing special about mincing the garlic. I always recommend taking the extra few minutes to use freshly minced. The jarred version doesn’t have nearly the same amount of flavor!

For the Dish:

Starting with the ground turkey, as you break it apart and begin to cook, you will want to add the veggies when it is about halfway done. Finish off the turkey and as the veggies start to soften add in the mixture.

As you cook your rice, let the sauce thicken up a bit and then add it all to a bowl. Top with sesame seeds and some fresh cut green onion!

** Making this dish Gluten-Free ** The only ingredient you need to watch out for is the soy sauce. Simply switch out for some liquid aminos (I prefer Braggs) and your are all set!

Ingredients

  • 1 C Uncooked Rice
  • 1 lb Ground Turkey
  • C Soy Sauce
  • ½ C Water
  • 2 T Brown Sugar
  • 2 T Red Wine Vinegar
  • 4 Cloves Garlic
  • 1 t Ginger
  • 1 T Starch + 2T Water
  • 1 Shallot
  • Broccoli
  • Carrots
  • Green Onion
  • Sesame Seeds

Instructions

  • Mince the garlic, chop the shallot, chop the broccoli and shred the carrots
  • Cook your rice per brand instructions
  • In a bowl add the soy sauce, water, brown sugar, red wine vinegar, garlic, and ginger
  • In your wok, add a little oil and cook the shallot until soft
  • Add the turkey and cook until about halfway done. Add in the garlic, broccoli, and carrots. Cook for around 4-5 minutes and then add the sauce mixture, cooking for another 5 minutes
  • Add the starch mixture to thicken the sauce
  • Plate, top with green onion and sesame seeds
  • Enjoy!
