Roasted Cherry Tomatoes: these things level up every dish I add them to!

Tired of the same pasta dishes, dips, pizzas, and sides? Roasting the veggies you put in them beforehand can be the perfect way to make a change that dramatically improves the flavor. Cherry tomatoes on their own are a little sweet, juicy, and full of flavor. When you add the garlic, oil, balsamic, and a little spice…. My goodness, these things take off with flavor!

What can you add them to? The options are absolutely endless. We use them for breakfast, lunch, appetizers, and dinner. Let me explain some options below:

  • Breakfast – Imagine it is the morning. You crack a few eggs and whisk them up. You load them into a pan and add some toppings for your delicious omelet. One of those toppings is these roasted tomatoes. Your taste buds will do a happy dance, and your morning will be incredible!
  • Lunch – Since they are roasted and soft, these can be spread on sandwiches or pressed into paninis for an absolute flavor bomb!
  • Appetizers – The first thing I think of adding them to from an appetizer standpoint is a feta dip. Oh boy, do they make that app sizzle! Other options are for a roasted bruschetta, flatbreads, spinach dips, or anything else you can imagine
  • Dinner – Of course, the easy answer here is adding to pastas.  I’ll add them to ravioli sauces and pesto pasta dishes.

  • Baking sheet
  • Cutting Board

Ingredients

  • 1 pint cherry tomatoes
  • 4 cloves of garlic minced
  • 1-2 Tbsp. olive oil
  • 1 Tbsp. Balsamic vinegar
  • Salt and pepper to taste
  • ½ tsp. red pepper flakes optional

Instructions

  • Preheat the oven to 400°.
  • Wash, dry, and slice the cherry tomatoes in half.
  • Mince the garlic and add both to a baking sheet lined with parchment paper.
  • Drizzle on the olive oil and the balsamic vinegar.
  • Season with salt, pepper, and the optional red pepper flakes.
  • Bake in the oven for 15-20 minutes until blistering.
  • Remove and serve them however you please!
  • Enjoy!
