Palmer House Potatoes

Palmer House Potatoes. For me,  it doesn’t get more nostalgic than this. Growing up, we made these all the time, and I can see why. They take 5 minutes to prepare, are low maintenance to cook, and taste wonderful. They can pair well with any type of meat but especially anything BBQ or grilled! (My go-to pairing for an easy with is with (**This Marinated Chicken**).

I know what you are probably going to ask next, and honestly I am going to have to disappoint you… I have no idea why we called them ‘Palmer House’. Maybe someone ate at the Palmer House restaurant??? It’s just one of those names that is so engraved in my brain, I could never call them anything else.

Whatever you want to call them, go for it. But these are simple, delicious, and should be added to your weekly/monthly rotation (especially in the summer!).

As always, I will now walk through a few of the key ingredients, cooking tips, and steps to help you crush this meal and be the dinner time hero:

  • Wash your potatoes! – I feel like this goes without saying, but I am going to say it anyway… wash your potatoes. The key to the flavor of this dish is butter and seasoning on the skin. If you don’t wash them, you probably don’t want to eat them.
  • Sticking to the pan – If your pan is old or most food sticks to it, cooking spray and butter may not be enough. Go ahead and use that parchment paper. It should still create that beautiful golden bottom crust that we all desire.
  • Prepping for the baking – Honestly, don’t be shy with the butter.  You want the potatoes glistening with it, and for it to seep underneath; it can soak in from all sides. For the seasonings, you can always add more after they bake, so find the right balance. They should look like this:
  • The baking process – Try not to disturb the potatoes while baking so that crust can truly form. You can use a fork to poke the potatoes and check for doneness (which can vary by the thickness of your potatoes.
  • Pairings – Anything BBQ, Grilled, or Smoked (Below are some favorites)
    • Chicken Wings
    • Smoked Ribs
    • Marinated Chicken
    • Chicken Parm Skewers

Equipment

  • Baking sheet

Ingredients

  • 4 potatoes washed and halved
  • Cooking spray
  • 4 Tbsp butter melted
  • 1 ½ tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder

Instructions

  • Preheat your oven to 375 degrees
  • Wash and dry your potatoes and cut them in half lengthwise.
  • Spray a cooking sheet generously with oil. If preferred, you can also add parchment paper to help with sticking.
  • Add the potatoes, cut side down
  • Baste them well with melted butter.
  • Mix the salt, pepper, and garlic powder together and then season the tops of the potatoes to your liking.
  • Bake at 375 degrees for around 40 minutes.
  • Remove and enjoy!

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make this meal gluten-free. There are no concerns with these potatoes; you should be good for this one!
