Back with another side dish, and this one can steal the show! Is it just me, or are carrots one of those love/hate vegetables? For me, growing up, I wasn’t really a fan of cooked carrots. I could eat them cold, but something about how the texture and flavor changed once they were cooked didn’t do it for me. I can’t be alone on this one, right?
As an adult, I have found a few different ways to cook carrots that I now enjoy, and this version is definitely one of them. I am pretty sure one of the common denominators of my enjoyment is the level of spice. Spicier food always wins in my book. Add on some Parmesan cheese (or any cheese, for that matter) and chances are I am going to love it!
Now back to the carrots. These are pretty fool-proof to make, and as I mentioned before, with the ingredients in the recipe, it is hard to imagine them not tasting delicious. Baking the carrots provides a little sweetness that, paired with the butter, garlic, spices, and cheese, brings together a nice combo. The hardest part is not eating the whole pan….luckily, they are pretty healthy!

- Pairings – This side dish is pretty versatile. It really can be paired with anything. A lot of times, we go with variations of grilled chicken breasts, but this also works well with:
- Seafood – salmon, scallops, walleye
- Beef – brisket, pot roast, steaks
- Pork – pork chops, pulled pork

Oven Roasted Carrots (Your New Favorite Side Dish)
Equipment
- Baking sheet
Ingredients
- 5 large carrots
- 4 Tbsp. butter
- 1 tsp Italian seasoning
- 5 cloves garlic
- 1 1/2 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. red pepper flakes optional
- Grated Parmesan
Instructions
- Peel, cut, and rinse your carrots
- FInely mince the garlic.
- Add the butter to a dish or pot and melt it in the microwave or on a stove.
- Find a large bowl and toss everything in a bowl (minus the Parmesan).
- Spread the carrots on a baking dish and bake at 425° for about 15 minutes.
- Remove from the oven, add the grated Parmesan, and bake for 5 more minutes.
- Serve with your favorite main dish.
