Do you love Pasta? Do you you Tacos? Do you love easy recipes and easy cleanup? If you answered yes to those questions, you are going to love this dish!!
Easy meals are kind of my thing. As you likely know by now, outside of this blog I work a full time job and have two young kids… so I can completely appreciate how nice it is to have quick dinners that are also homemade and delicious!
Anyone else’s kids picky? My goodness.. up until about 3 years old both my kids ate pretty much everything we put in front of them. Now, it’s getting very difficult (especially for veggies). This one is a pleaser for the whole family. It’s great because they get a good serving of protein and tomatoes.
Couple of quick notes about the meal:
Prep: As I always recommend, try to use freshly minced garlic whenever you can. I also have been on a shallot kick lately. They are easier to chop up and bring an incredible taste to the dishes (way better than onion in my opinion).
Cooking: Overall, this is super simple to make but just be sure to watch the amount of pasta vs. liquid. Too much either way and it can get a little soupy, or dry. I always recommend starting with less liquid and adding more as needed to ensure the consistency is exactly how you want it!
Toppings: A few great additions you can add to the meal once it’s done – Sour Cream, Green Onion, Avocados, and More Cheese!
** Making this Gluten-Free ** The only thing you need to watch out for this one is the pasta. Simply switch out for gluten free and you should be good to go. My favorite for this dish is the Rotini from Barilla
