Honey Chicken With Rice

Honey Chicken with Rice is a perfect variation of chicken fried rice that can be made in 30 minutes and should be enjoyed by even the pickiest of kids!

Lately, our schedules have been absolutely slammed with kids’ activities and work events. Even though we are busy, I still like to try and have the kiddos eat homemade meals, but that means they need to be quick! Our kids like chicken fried rice, but sometimes we get a little sick of the traditional recipe. Enter this variation, which brings in the heat from the chili crunch I like to add, and the sweetness from the honey.

This one is so good, it won’t even require a busy week to make. It is the perfect combo of easy, healthy, filling, and delicious. That is a hard combo to achieve, and automatically puts this dish into our monthly rotation!

As always, I will now walk through a few of the key ingredients and cooking tips to help you crush this meal and be the dinner time hero:

  • Chicken – For me, I prefer to dice the chicken breasts into small pieces. Can you do chicken thighs? The answer is yes, but it will be a little trickier. Thighs take a little more time to cook and break down the fats, so you just need to be careful not to burn the onions and garlic.  
  • Rice – Does it really need to be day-old rice? The purists will say yes. As someone who makes this type of dish a lot and makes it in a pinch, I say it doesn’t really matter! Do what you have time for and enjoy it either way.
  • Add Ins – Even though the picture and video didn’t originally show it, we now love to add eggs to make this a honey chicken fried rice dish! It makes it even tastier! Additionally, if you are like us, it needs more heat! We add Momofuku Chili Crunch, and all I can say is wow!

Equipment

  • High-rimmed pan
  • Pot

Ingredients

  • 1 lb chicken breasts
  • 1 Tbsp. sesame oil
  • 1 small onion
  • 3 shoots green onion
  • 4 cloves garlic
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 1/3 cup soy sauce
  • 2 Tbsp. honey
  • 1/3 cup frozen peas
  • 1 cup cooked rice
  • Additional add ins:
  • Egg For more of a chicken fried rice feel
  • Momofuku Chili Crunch For extra heat

Instructions

  • For prep, mince the garlic, finely chop the onion, and separate the green onion into two parts (dark green and the white/light green). Finely slice the white ish portion of the green onion.
  • In your high-rimmed pan, add the sesame oil and heat on medium.
  • Add the onion, garlic, and green onion to the pan and cook for a few minutes
  • While that cooks, dice your chicken breasts into small pieces and start the rice.
  • Add the chicken to the pan along with the salt, pepper, chili powder, and paprika
  • Give it all a good mix and then cook the chicken.
  • Once cooked through, add the cooked rice and the peas. Then pour in the soy sauce and honey.
  • Give everything a good mix and heat for a minute or two.
  • Stir in the sesame seeds and the green portion of the green onion.
  • Enjoy!

Notes

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make this meal gluten-free. There is only one minor tweak for this one: soy sauce. Just make sure to use liquid aminos. (We like Braggs.)
