Gluten Free Banana Bread

A perfect recipe to give you all the childhood feels 🙂

Growing up I always loved Banana Bread. It is something I could help my mom make, it makes the house smell delicious, and when it comes out the oven and you get that first warm bite (with a little melted butter) it is absolutely delicious!!

Now that I have two little ones, I am making sure to keep the tradition alive. My son, Chase, gladly helps me mix up the ingredients and of course loves adding in the chocolate chips (and sneaking a few while we wait). If you don’t have a recipe that you love, give this one a try! I promise it will bring many memories and happy tummies!

Equipment

  • Hand Mixer

Ingredients

  • ½ C Canola Oil
  • 1 C Sugar
  • 2 Eggs
  • 3 Ripe Bananas
  • 2 C Flour (GF or Regular) I used Bob's Red Mill
  • 1 t Baking Soda
  • ½ t Baking Powder
  • ½ t Salt
  • 3 T Milk
  • ½ t Vanilla Extract
  • Chocolate Chips (optional)

Instructions

  • Preheat the oven to 400 Degrees
  • In a large mixing bowl add the oil and sugar and mix well using a hand mixer
  • Next add in the eggs and bananas and mix until there are no clumps in the batter
  • Add the flour, baking soda, baking powder, salt, vanilla, and milk and mix again
  • (optional) add in the chocolate chips and mix again
  • Grease a bread baking pan with oil or spray and pour the bread mixture into the pan
  • Bake for 1 hour at 400 degrees or until a toothpick comes out clean!
