Garlic Butter Chicken Bites… you say the words butter and garlic, and you’ll usually see me come running. These are a simple and delicious meal for any day of the week. Pair them with potatoes or pasta and a roasted veggie. They could also be a delicious appetizer if you simply poke them with a toothpick—watch them fly off the tray!
Does anyone else reading this have an addiction to garlic? I do. And it leads me to want to share a confession. Sometimes in my ingredients list, I say to add 3 cloves of garlic, but when I make it myself I add 4 or 5….. It’s a real problem, but it tastes so dang good.
Phew, that feels good to get off my chest. Now, please don’t ask me about my addiction to butter.
In all seriousness, this really is a simple and delicious meal. Let’s walk through a few of the key ingredients and cooking tips to help you crush this meal and be the dinner time hero:
- Chicken – First off, let’s discuss the type of chicken to use. In my opinion, the best option is chicken breast. It allows you to cut in bigger chunks, cooks evenly, and stays moist! Now, the biggest piece to watch with this meal is overcooking the chicken. Even though it will be tossed in a lot of butter (which helps), you still don’t want it to be dry!
- Cooking Tips – Since there aren’t a lot of other ingredients to explain, let’s talk about the few cooking instructions you have to get right
- The Pan – Not too hot! You don’t want to burn the butter or overcook the chicken. Medium should be plenty hot enough to sear the first side and not burn anything else.
- The Garlic – Since this meal cooks so quickly (and so does garlic), make sure when you add the final 2 Tbsp. of butter and the garlic, that you are actually ready to eat. The last thing you need is burnt garlic with your chicken. It really only needs about 30 seconds to cook (and you should slightly remove the heat when you add it).
- The Sides – When pairing with sides, you can choose options to make it more healthy (ish) or you can pile on with some buttery mashed potatoes!
- Oven-roasted veggies (our choice)
- Green Beans
- Mashed Potatoes
- Parmesan noodles (our choice)
- Baked potato
- And much more!
