Chicken Tortilla Soup

The Winter season has definitely arrived here in Wisconsin. While we will miss the summer days and warm weather, one good thing it brings is soup season! One of my absolute favorite soups is this Chicken Tortilla Soup. It has a little spice, a ton of flavor, and instantly warms the soul.

Like most soups, this recipe is very easy to make, has a pretty short list of ingredients, and will leave your entire family and friends leaving full happy and full tummies!!

I usually let mine slow cook for a couple hours on a low simmer to fill the house with the delicious aroma, but this recipe can also be streamlined to cook within an hour. Here is a list of what you will need for the recipe and some of the brands I use.

Chicken Breast – This is typically what I use for the cook, although if you want to make the meal even faster you can use a rotisserie chicken!

Chicken Broth – Definitely try to go organic with everything I can an this ingredient is an easy one to do so. I don’t use low sodium, but you absolutely can. I look for Kroger’s Simple Truth or Pacific Foods Chicken Broth

Tomatoes – No brand beats Muir Glen in my opinion! And the Fire-Roasted is a game changer for this recipe!

Don’t forget to add on the toppings!! Lots and lots of toppings!

  • Tortilla Chips
  • Avocado
  • More Monterey Jack Cheese

Chicken Tortilla Soup

Ingredients

  • 1 Onion, chopped
  • 3 T Garlic, minced
  • 2 T Olive Oil
  • 4+ C Chicken Broth
  • 1 Can Fire Roasted Tomatoes
  • 2 Chicken Breasts
  • 1.5 T Cumin
  • 1 T Chili Powder
  • .5 t Cayenne Pepper
  • Salt & Pepper to Taste
  • 2 Carrots, chopped
  • 2 Bay Leaves
  • 1/2 C Frozen Corn
  • 1.5 C Monterey Jack, shredded

Instructions

  • In a soup pot, heat oil and sauté the onions and garlic for 4 mins.
  • Add all the remaining ingredients (EXCEPT THE CHEESE)
  • Bring to a boil and simmer for a few hours.
  • Remove chicken, shred, add back in.
  • Add more chicken broth if desired. Bring to a boil then remove heat
  • Add the cheese, stirring until completely melted and then serve!
  • Top with tortilla chips, cheese, avocado, and whatever else you want!
