Chicken Fried Rice

Fried rice is easily one of the best sides for all Asian dishes, but when you add chicken it becomes an entire meal! This can be made is less than 15 minutes and it 100% delicious!

Once again I am here for you with easy dinners! Not only is this one so easy to cook, it is way better than takeout. My kids and entire family love it. In fact, it’s the meal my wife makes most often when I am not home to cook dinner! Don’t like peas, don’t add them…make this your own and enjoy it!

So how is it made?

Chicken – Let’s talk chicken for a moment. If you have the budget, I definitely recommend buying organic and antibiotic free. In fact, I typically try to use all organic foods and spices when I cook. What we put in is what we get out.

Ok, off my soap box, and back to chicken. Slice it nice and thin and then cut into small pieces. Heat in the pan and season with salt and pepper. Try to get it a little golden without over cooking and move it to the side!

Sesame Oil – Don’t forget the sesame oil. When you cook up the onions and carrots, this oil adds an amazing and much needed flavor!

Eggs – The more eggs the merrier in my opinion! My kids absolutely love eating the scrambled eggs, so I choose to use 3 but you can use less if you would like!

*Need it Gluten Free? Just swap out the soy sauce for liquid aminos! Easy as that!*

Ingredients

  • 1 Chicken Breast
  • 1 T Oil
  • 2 T Sesame Oil
  • 1 Onion
  • 4 Medium Carrots
  • Peas
  • 3 Eggs
  • C Soy Sauce
  • C Cooked RIce
  • Salt & Pepper to Taste

Instructions

  • Chop your chicken into small pieces. In a wok, add the oil and chicken. Season with salt and pepper and cook through, then remove
  • Start cooking your rice in a separate pot
  • Add the sesame oil to the wok along with the onion and carrots. Once soft add in the peas (optional).
  • Add the chicken back in and then push the mixture to one half of the pan
  • Crack your eggs and scramble them in the wok. Then mix it all together.
  • In goes the rice, add the soy sauce to taste, toss it all together and eat!
  • Enjoy!
