Cajun Chicken Alfredo Pasta

This spicy twist on Chicken Alfredo will make you forget why you ever ate the classic version! Also, it can easily be made Gluten Free (read below for the details).

I typically am not a huge fan of white sauce pastas. It’s not that I don’t like them, it’s just that I prefer the heartier red sauce versions. One way to convince me to try them out is when you add the word Cajun in front of it…Anything with spice will always get my attention! I promise if you give this one a try it will move into your Top 5 pasta dishes….it’s so good!

Why I also love this dish so much is it can be made in 20 minutes or less. I don’t about your household, but for us, having easy weeknight meals is a must. Between work and chasing the kids around they help ensure we still get a delicious home cooked meal!

Here are a few tips to make this dinner satisfy even the pickiest eaters

Chicken – Make sure to trim or pound to about 1/2″ thick. This does two things: It tenderizes the meat, and it ensures that when you pan seared it will cook all the way through. When you add on the oil and seasoning don’t be shy! I don’t think you can over season this one, plus the excess will stay in the pan and add even more flavor to the sauce. Last tip, when you cook the chicken, make sure the oil is shimmering/warm enough. Place the chicken in the pan and do not disturb for 5 minutes. This will help you get the perfect crust on both sides!

Pasta (GF) – Obviously if gluten isn’t an issue for you, use any brand of fettucine you prefer! If you do need to make this GF I recommend using Barilla’s Gluten Free Pasta. In my opinion it tastes exactly the same and doesn’t get all crumbly like some other brands. Either way I would cook the pasta till a minute before al dente. When you toss it with the sauce it will cook a little more!

Alfredo Sauce – Two things here. Number 1, if possible try to use freshly grated parmesan. I realize it is a little more work, but the flavor is worth it. Number 2, make sure to lower/turn off the heat when you add the cheese so it doesn’t separate the fats.

Ingredients

  • 2 Boneless Chicken Breasts
  • ½ t Onion Powder
  • ½ t Garlic Powder
  • ½ t Paprika
  • 1 t Cajun Seasoning
  • 2 T Olive Oil
  • 10 oz Fettucine Pasta (cooked based on package instructions)
  • 4 T Butter
  • 4 Cloves Minced garlic
  • C Heavy Cream
  • ½ C Grated Parmesan

Instructions

  • Pound the chicken breasts to ½ inch thick. Mix the onion powder, garlic powder, paprika, and Cajun seasoning together and rub both sides of the chicken
  • In a sauce pan, heat the oil on medium high heat. Once shimmering, add the chicken and cook 5 minutes per side until golden. Remove and add to plate and tent with foil
  • In the same pan, reduce the heat and melt the butter, add the garlic and simmer for 5 minutes
  • Add 1C Heavy whip and bring to a simmer. After 5 minutes remove from heat, add the remaining heavy whip and the grated parmesan and contiguously stir until smooth consistency. Add Salt and Pepper to taste
  • Mix in the cooked fettucine noodles and plate. Add the chicken on top and add some shredded parmesan, enjoy!
