Oven-Roasted Broccoli – My Go-To Side Dish

If you told me when I was 12 that my weekly go-to side dish as an adult was going to be Oven-Roasted Broccoli, I would have laughed you right out of the room. Fast forward to today, and here I am telling you it’s the truth, and you have to try it.

Veggies and I have never really been friends. I eat them because I know they are good for me (thanks, Mom and Dad), but that doesn’t mean I really enjoy them. Over time, I have been finding new ways to spruce them up, but one I couldn’t ever come around to enjoying was broccoli.

Growing up, we used to boil it and then melt some cheese over the top. (Yes, I’m from Wisconsin.. Even with cheese, I still was not a fan… But when I figured out this simple recipe (literally 5 ingredients) and roasted it in the oven, it changed everything. The broccoli gets so tender and a little charred, and with the added flavor from the seasonings, I just love it!  

We add it into stir fry, pasta, or just as a plain side for chicken or beef. If I haven’t sold you enough in my broccoli monologue, that’s okay. I was skeptical at first, too, but I hope all the long-time broccoli haters out there give this one a go!

Oven-Roasted Broccoli – My Go-To Side Dish

Equipment

  • Baking sheet
  • Parchment paper

Ingredients

  • 1 large head of broccoli
  • 2 Tbsp. olive oil
  • 2/4 tsp. cracked salt
  • 1/2 tsp. cracked pepper
  • 1/2 tsp. garlic powder

Instructions

  • Preheat the oven to 400 degrees.
  • Cut the head of broccoli into small broccoli florets. (Tip: The smaller they are, the more tender they will be!)
  • Add them to a bowl and drizzle in oil, and then add spices to taste. (My measurements are a rough estimate.)
  • Give the broccoli a good toss and then spread it out on a baking sheet lined with parchment paper.
  • Bake at 400 degrees for 20-25 minutes or until desired. I prefer mine to be a little charred/crispy.
  • Pair with your main dish or add to pastas, stir-fries, etc.
  • Enjoy!

Notes

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make a meal gluten-free. For this one,  there is no need for GF substitutions, as it is naturally gluten-free!
