Pesto Pasta (Noodles & Co. Copycat)

Nothing beats a freshly made Pesto Pasta. It may seem like a lot more work, but all you really need to do is add 5 ingredients to a food processor. I add chicken to mine and have tried to make it as close to Noodles & Company’s recipe as possible!

As you will see from a lot of my posts on here, easy meals are my go to meals. This is another one that if you plan it out right, it can be cooked in less than 20 minutes. Let me walk through how:

Starts with a quick prep, quickly chop your chicken into small pieces (if you are adding). In a large pan heat the oil and add the chicken. Season with salt and pepper and cook all the way through. While the chicken in cooking, halve your cherry tomatoes, slice the mushrooms and mince some garlic. Also bring your water to a boil.

If homemaking the pesto, add the 5 ingredients to a blender until semi smooth. Once the chicken is done, remove and add the mushrooms and a little oil. Cook for 1-2 minutes and add the tomatoes. while they cook add the pasta to the salted water and cook until al dente. Pour the white wine into the pan and reduce for 5 minutes. Add back the chicken and add the butter/milk mixture.

Stir in the pesto and warm. Drain the pasta, add to the sauce, and toss. Plate and eat…easy as that!!

Pesto – if you don’t have time to make it fresh, I like finding pre-made pesto in the dairy section of your grocery store. Brands like Rana always taste more fresh and make the dish better

Pasta – to make this closer to the Noodles and Company dish, use Cavatappi pasta. Otherwise, feel free to use whatever one you want

Parmesan – This is definitely an area that you want fresh. It takes seconds to grate parmesan and it tastes way, way better

White Wine – My rule of thumb here is pick a wine that you want to drink with the meal. The only type I would avoid is super sweet wines. Any Pinot Grigio, Sauvignon Blanc, or Chardonnay will work just fine! When we make it with go with a buttery Chard

**Making This Gluten Free ** This one is very easy to convert. The only thing you need to use is a Gluten Free paste. I like Barilla Penne for mine

Ingredients

For the Pasta

  • 1 Chicken Breast
  • 2 T Olive Oil
  • Salt & Pepper
  • 1 Pint Cherry Tomatoes
  • 5 oz Mushrooms
  • 2 Clove Garlic
  • 7 oz Pesto
  • C White Wine
  • 5 T Melted Butter
  • C Milk
  • 12 oz Pasta
  • ½ C Parmesan

For Homemade Pesto

  • 2 C Fresh Basil Leaves
  • 2 T Pine Nuts
  • 2 Cloves Garlic
  • ½ C Olive Oil
  • ½ C Parmesan

Instructions

  • Dice the chicken, mince the garlic, halve the tomatoes, slice the mushrooms
  • If homemaking, add the pesto ingredients to a food processor until smooth
  • Boil your pasta in lightly salted water until al dente
  • Add 1 T oil in the pan, toss in the chicken. Season with salt and pepper to taste and cook until fully cooked through, then remove
  • Add 1T oil and add the mushrooms. After 2 minutes add the tomatoes and cook for 3 more. In goes the garlic and cook until fragrant
  • Pour in the wine and reduce for 3 minutes. Add back the chicken and mix the melted butter and milk, then add.
  • Stir in the pesto and warm. Add the parmesan cheese and toss in the pasta
  • Serve with more parmesan
  • Enjoy!
