Creamy Beef Pasta

There are some nights where you just need something quick and easy. At the same time you want it to taste delicious and you need the family to love it too. Impossible you say? Don’t worry, I have you covered with this creamy beef pasta!

Life can be chaotic. My wife and I both work, we have two young kids, there seems to be endless amounts of projects and cleaning to do, so some nights it can be hard to put in the effort of cooking. Even though boxed meals like hamburger helper are easy they still take time and are full of preservatives that aren’t as good for you.

This meal can be created from scratch and cooked in 20 minutes start to finish. And nothing beats a home cooked meal with fresh ingredients.

For my Gluten Free fans out there this one is easily converted and honestly your guests probably wouldn’t even know its GF. All you need is to swap out the pasta. For penne noodles I always prefer Barilla. I feel it actually comes out al dente and doesn’t just break apart when it cools down.

Tomatoes – Any diced tomatoes will do for this but I always look for organic. Muir Glen has great options and my secret go to is always the ‘Fire-Roasted’ option.

Creamy Beef Pasta

Ingredients

  • 1 T Olive Oil
  • ½ Onion, chopped
  • 2-3 Cloves Garlic, minced
  • 1 lb Ground Beef
  • 10 oz Penne Pasta
  • 14.5 oz Diced Tomatoes
  • 1 t Italian Seasoning
  • ½ C Heavy Cream
  • Salt & Pepper to Taste
  • ½ t Red Pepper Flakes
  • Grated Parmesan Cheese

Instructions

  • In a pan, heat the oil and add the chopped onion
  • When translucent, add the garlic and beef. Break apart the beef and cook through
  • In the meantime, add salt to your water and boil your pasta to al dente
  • When the beef is cooked, add the diced tomatoes and Italian seasoning. Bring to a simmer and cook for 5 minutes
  • Reduce the heat, add the heavy cream, salt and pepper, red pepper flakes (optional), stir and simmer on low for a few minutes. Remove the heat, add in the cooked pasta, and toss in the sauce
  • Sprinkle on the fresh parmesan cheese
  • Enjoy!!
