You may have seen this recipe before without even realizing it. This is the most viral soup ever on Instagram with OVER 95,000,000 VIEWS!!! That’s right, 95 Million! With that hype you pretty much have to give it a try!
Wisconsin can be cold, and I mean verrrryy cold… There are some weeks where we get to -50 degrees with the wind-chill. Because of that, during the winter we need to make cozy soups to warm our soul. I don’t think I have ever met someone that doesn’t like loaded baked potatoes, so I had the great thought of making it into a soup! Bacon, cheese, potatoes.. does it get any better? Let’s talk about the ingredients and how easy this meal is to make!
Potatoes – This is by far the slowest portion of the meal to prep, but it also is the easiest. I bake my potatoes at 400 degrees for an hour so they are nice and tender. From there you scoop out the insides and add them to a bowl to cool. Make sure not to break apart the big chunks or over mash them!
Bacon – Since you are already baking the potatoes you can also bake the bacon! 375 degrees for about 20 minutes usually gets it just right. If you don’t have the time you can also just pan fry. The goal is to get it nice and crispy so it can easily be chopped into bacon bits. As for brands, I like going with uncured and nitrate free if possible so I look to Organic Truth or Nueske’s!
Cheese – I get it, using pre-shredded chees is much easier. If you are in a punch or don’t have a block of cheese, go for it. For best results and way better taste, shred it if you can!
Flour – For my household we make everything Gluten Free so we of course us Bob’s Red Mill. So for all of you out there that can’t have gluten, you can still make this recipe!
When you are topping the soup feel free to get creative! In the recipe I used:
- Bacon
- Shredded Cheddar Cheese
- Sour Cream
- Green onion
But you could also add some fun things like:
- Salsa
- Shredded Chicken or Beef
- Croutons
- Tortilla Chips
- Etc.

Loaded Baked Potato Soup
Ingredients
- 3 Potatoes, baked
- 6 Slices Bacon
- 4 T Butter
- 2 Cloves Garlic, minced
- 1/3 Onion, chopped
- 1/3 C Flour
- 2 C Milk
- 1 C Half & Half
- 2 C Chicken Broth
- 1 t Salt
- 1/2 t Pepper
- 1/2 t Garlic Powder
- 2 C Cheddar Cheese, shredded
- Green Onion
- Sour Cream
Instructions
- Preheat oven to 400, poke and bake potatoes for 1 hour
- Cook the bacon using your favorite method, cool and chop into bits. Save 1T bacon grease
- In a soup pot, add the bacon grease and butter
- Once the butter is melted, add the onion and cook for 5 minutes until translucent
- Add the garlic and cook for another minute. Then add the flour and mix in well
- Slowly incorporate the milk and half & half, stirring constantly. Do the same with the chicken broth.
- Add the salt, pepper, and garlic salt and bring to a simmer. Cook for 5-7 minutes
- Reduce the heat to low, add the bacon and cheese. Once melted add in the potatoes. Cook for 2-3 minutes to re-warm the potatoes and scoop to a bowl
- Top with you favorite toppings and enjoy!!
