Spinach and Artichoke Dip

A staple for everyone to have in their arsenal this dip is perfect for Gameday, parties, or just eating as a delicious bowl of comfort food!

It took me a long time to warm up to spinach and artichoke dip. You can’t go wrong with melted cheese but for some reason I was never a fan of artichokes (and honestly not really a fan of cooked spinach either). If you find yourself in the same boat, I recommend giving this recipe a try. The first few times I tried it, I used about half the spinach and artichoke amounts listed in the recipe and have slowly continued to add more each time. Now I find it absolutely delicious!

The best thing about this dip is how easy it is to prepare and cook. In my opinion, crock pot low and slow is the best way to cook this but if you are in a pinch you can cook it quicker. The key will be keeping the heat to medium and making sure to constantly stir as to not burn or overcook the cheese. Here’s the list of what you need and my favorite brands for the ingredients.

Cream Cheese – Nothing too special here, I typically use Philadelphia Cream Cheese 1/3 less fat. I like to think it makes chips and melted cheese a little healthier

Sour Cream – If you aren’t using “a dollop of Daisy” you’re doing it all wrong

Artichoke Hearts – I usually buy Reese artichoke hearts that are quartered and then slice them even more. In my opinion, the thinner the better. Especially if you are serving to people new to this dip. It helps them blend in a little more

Mozzarella & Parmesan – avoid using pre-shredded/grated cheeses at all costs. Bagged cheese always has some starch added which can change the consistency of the dip (and it doesn’t taste as good!)

  • Tortilla Chips
  • Bread
  • Crackers
  • Red Peppers
  • Carrots
  • Or just eat it by the spoonful!

Ingredients

  • 8 oz Cream Cheese
  • 1 C Sour Cream
  • 1/4 Onion, chopped
  • 3 Cloves Garlic, minced
  • 1 Can Artichoke Hearts, sliced
  • 1 t Salt
  • 1/2 t Pepper
  • 1/2 t Red Pepper Flakes
  • 8 oz Spinach
  • 1 C Mozzarella Cheese
  • 1/2 C Parmesan, grated

Instructions

  • In your crock pot add the cream cheese, sour cream, onion, garlic, artichoke hearts, salt, pepper, red pepper flakes and mix it all together
  • Add in the spinach, shredded mozzarella, and grated parmesan and give it a gentle toss
  • Heat on low for 2-3 hours until spinach is wilted and everything is melted together
  • Dip with chips, bread, veggies, or anything else you like!!
