Need a quick and easy recipe you can grill on a busy weeknight? Look no further than these Garlic Chicken Parmesan Skewers!
As the better weather starts to settle in, that means grilling season is finally underway! I realize some of you (including myself) grill all year long no matter the weather, but for those who live in the colder climates, it’s nice to grill and not have to remove snow or freeze your buns off!
In my opinion, there isn’t much better than a meal cooked on the open flame. But I am not here to tell you propane vs. charcoal vs. smoker. I am here to agree that cooking on any source of grill makes everything taste better. It’s also way more fun to cook!
This recipe is meant to be super easy, so you can have a chance to fire up the grill in the middle of the week. So crack open an ice-cold beverage, fire up the grill, and cook up this delicious dinner. You’ve earned it!
As always, I will now walk through a few of the key ingredients and cooking tips to help you crush this meal and be the dinner time hero:
- Chicken – Cubed up chicken breasts are definitely the go-to play for this one. Cube them into about 1-inch pieces for the best results. They’ll be tender but also easy to cook through! You could try chicken thighs, but I just don’t think they would work as well.
- Garlic Parmesan Sauce – This sauce is pretty self-explanatory, but the biggest thing to watch out for is when you add the cheese. I recommend removing the heat a minute before so the cheese mixes in better without clumping and curdling.

Garlic Parmesan Chicken Skewers

Ingredients
- For the chicken:
- 1½ lbs chicken breast
- Olive oil
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 2 tsp. Cajun seasoning
- For the sauce:
- 4 Tbsp. butter
- 3 cloves garlic
- 1/2 tsp red pepper flakes
- 1/2 tsp dried parsley
- 1/2 cup shredded Parmesan
- 1 lemon juiced
Instructions
- Cut your chicken breasts into 1-inch cubes.
- Drizzle with olive oil and sprinkle on the spices listed above.
- Toss the chicken until it is evenly covered in the spice mixture.
- Thread the chicken onto kebab skewers, fire up the grill, and cook the chicken.
- While those cook, make the sauce by melting the butter in a pan and adding the minced garlic. Cook for a minute and remove the heat, then add the remaining ingredients and stir until it is thoroughly mixed.
- When the skewers are done, add them to a plate and pour the butter mixture over the top!
