Tuscan Ravioli (15 Minute Dinner)

I’m going to be bold here and say that this sauce and meal will taste better than most dishes you go out to eat for. Obviously, the quality of the ravioli can have an impact, but this sauce is one of our favorites and can be used to level up so many different dishes!

We use it for chicken breast or salmon (served with mashed potatoes), or you can add spinach to it and serve it over pasta (sausage can be a great addition). Or, hey,  just drink it as a smoothie!

(Okay, maybe the last one took it a little too far!)

But it really is just that good and definitely something you need to try and then add to your weekly or monthly rotation!

As always, I will now walk through a few of the key ingredients and cooking tips to help you crush this meal and be the dinner time hero:

  • Ravioli – Can you make your own? Of course, you can, but that will definitely add more time and remove this from the “easy” or “15-minute meal” categories. If you are going to buy them, my go-to brand is Perfect Pasta. They are so delicious and taste amazing with this sauce!
  • Tuscan Blend – If you have enough ingredients, I highly recommend tripling the recipe and adding it to a shaker. This stuff is so delicious and should be used on everyday chicken breasts. Would make for a great meal prep idea!
  • Tomatoes – If you have a little more time, substitute the sun-dried tomatoes from a jar and add in some roasted cherry tomatoes. 
  • Wine Pairing – If you want white wine, I recommend a sauvignon blanc.  If you’re feeling red, try Italian table red or a soft pinot noir.

Ingredients

  • For the Tuscan blend (all dried):
  • 1/2 Tbsp. paprika
  • 1 tsp. parsley, basil, oregano
  • 1/2 tsp. salt, pepper, thyme, garlic powder
  • 1/4 tsp. rosemary
  • For the sauce/ravioli:
  • 2 Tbsp. butter
  • 4 cloves garlic minced
  • Sun-dried tomatoes julienned
  • 1/2 cup veggie stock (chicken stock or white wine also work)
  • 1 ½ heavy cream
  • Tuscan blend
  • 1 cup Parmesan grated
  • Ravioli @perfectpastainc

Instructions

  • In your pot, bring salted water to a boil. Cook the ravioli based on package instructions (and save a little pasta water).
  • In your pan, on medium heat, melt the butter. Add the garlic and tomatoes; cook for 1-2 mins.
  • Pour in the stock and 1 Tbsp. of the spices. Reduce for 3 minutes.
  • Add the heavy cream and remaining spices and bring to a low simmer for 5 minutes.
  • Lower the heat and add the Parmesan, cooking for 2-3 mins.
  • Toss in your cooked ravioli and plate.
  • Enjoy!

Notes

GLUTEN-FREE SUBSTITUTIONS: For those of you who need it, I always like to talk about substitutions to make this meal gluten-free. There is only one thing to consider for this meal: the ravioli. Luckily, there are a lot of gluten-free ravioli available, such as the ones made by Cappello’s. It’s a pretty simple substitution for a delicious meal!
