Breakfast Bars (Gluten Free Too!)

The Breakfast Bars are so good, you could easily serve them as a dessert and no one would question it at all. Between the 4 of us we had a hard time not eating the whole tray in 1 day.

Who needs boring old granola bars or plain old oatmeal when you can have some of these for breakfast?? The are soft, ooey gooey, and they also will fill you up and leave you energized and ready for a great day! Best part is, even picky kids will eat these. And if you don’t want to add the chocolate drizzle on the top, they still will taste delicious!

Couple steps that can help the end result:

Mixing – Mix the ingredient types separately. Meaning, in one bowl mix the peanut butter, applesauce, brown sugar and vanilla. Stir it together until completely smooth. In another bowl mix the oats, cinnamon, salt, and baking powder.

Then it’s time to mix them together. Slowly the oats and milk into the peanut butter mixture, half at a time.

Flavorful Additions – We decided to use chocolate chips in ours, but you could also add:

  • Cranberries
  • Raisins
  • Nuts
  • Blueberries
  • Etc

Ingredients

  • ¾ C Peanut Butter
  • ¼ C Apple Sauce, Unsweetened
  • ¼ C Brown Sugar
  • 1 t Vanilla Extract
  • 1 t Baking Powder
  • ¼ t Salt
  • ¼ t Cinnamon
  • C Oats
  • ¾ C Milk
  • Chocolate Chips

Instructions

  • Preheat your oven to 350 degrees
  • In a bowl mix together the peanut butter, applesauce, vanilla and brown sugar. Mix together until nice and smooth
  • In another bowl mix the oats, cinnamon, salt, baking powder
  • Slowly mix the two together with the milk and then mix in the chocolate chips
  • Add to a greased 9×9 baking dish and bake for 30 minutes
  • Let cool, and then slice up. If you would like, drizzle with some chocolate sauce and take a big bite!
