If you like Piña Coladas and getting caught in the rain… then this dessert is going to be right up your alley! Fresh, light, healthy, and incredibly delicious!
I realize not everyone likes coconut or pineapple, you might even think this combination is strange… but I have to tell you, don’t knock it ’til you try it. Something about the warm grilled pineapple with the cold delicious ice cream and that caramel drizzle just makes my taste buds happy!
Few quick tips for this easy dessert:
Grilling the Pineapple – Get the grill nice and hot. If you can, coat a few of the grates with olive oil to prevent sticking. Core and peel your pineapple and then cut into 1/2′ slices. When you flip on the grill, be careful because they will slide around a little bit (you’ll see what I mean)
Caramel Sauce – Every caramel sauce isn’t created equal. Finding ones without crumby ingredients is even harder. If your local store has it, my recommendation is Torani! It is the best by far
Last note, even though this may seem like a summer dessert, it can be made all year long. And it is a much healthier option than many other choices

Grilled Pineapple with Coconut Ice Cream

- Fruit Corer
Ingredients
- 1 Pineapple Round
- 1 Scoop Vanilla Ice Cream
- Caramel Sauce
- Shredded Coconut
Instructions
- Trim, core and slice your pineapple
- Grill for 1 minute per side and then remove
- Immediately add a scoop of ice cream
- Drizzle with caramel and top with shredded coconut
- Enjoy!
