This could be my favorite side dish of all time. The perfect pairing is anything BBQ related, but in my opinion you can eat it with just about anything… or even by itself!
What should we eat with it? This is a question we ask each other all the time. Finding the right sides to pair with a meal can be challenging. Even tougher is getting creative so you don’t just eat the same ones over and over again. Enter my corn succotash. First of all, just know it is super easy to make. Little bit of chopping, add in some seasonings, and enjoy.
As I mentioned above, this side pairs perfectly with all BBQ dishes. My absolute favorite is with slow cooked ribs. Add in some smashed potatoes and you have yourself the perfect meal! Let’s break down what you need to make this one:
Corn – I typically use frozen corn. It won’t matter too much for the recipe. The absolute best is if you can grill corn on the cobb and then slice it off the cob (with a little char on it). Otherwise any corn will do!
Veggies – only need two other veggies for this one, red pepper and zucchini. As you prep them, make sure to cut them into small pieces.
Corn Succotash
Ingredients
- 1 Bag Frozen Corn
- 1 Red Pepper
- 1 Zucchini
- 3 T Butter
- Seasoning Salt, to taste
- Cracked Pepper, to taste
Instructions
- Chop up the zucchini and red pepper in to small pieces
- In a pan add all of the ingredients, heat on medium
- Cook until the butter is melted and the veggies are soft (5-8 minutes)
- Enjoy!
